Easy Oven Roasted Pork
This past year we ordered our first half hog from a local farmer. Having a freezer filled with delicious forest raised pork makes me feel so happy (what can I say, I’m a simple woman). We don’t have a smoker so coming up with a simple options to have delicious pork that can be used as pulled pork or just eaten as was a must.
I love using simple, clean ingredients, and especially love using a dry rub when I can get away with it with roasted meats just for simplicity’s sake. This dry rubbed oven roasted pork gets perfectly crispy on the outside and is juicy on the inside and fall apart tender when it’s done. The trick with a pork roast (or any roast really) is to cook them low and slow.
Preheat your oven to 300 degrees and set your 3-4 pound pork roast out to rest for about 30 minutes.
Pat dry, then generously salt each side. Next, mix together your other spices in a small bowl then rub all over each side of your roast. You want to make sure to use all of the spices. Next, drizzle some olive oil in a large dutch oven or a roasting pan, then place your roast inside. Throw it in the oven for 3:30 hours, checking to see if its done.
